Citrus Chili Shrimp Tacos

This flavor packed taco is the perfect summer recipe to enjoy with family or impress guests. We are living for our Citrus Chili on shrimp and cannot wait for you to try this recipe.




Ingredients for 6-8 tacos

Lainey's Citrus Chili Salt

about 20 pcs shrimp

1/2 head green cabbage

1 bulb fennel

1/2 bunch cilantro

3 radishes

3 limes

2 mandarines

2 cups masa harina

2 tbsp mayo

2 tbsp yogurt

Salt

Pepper


Let get cooking!


Step 1. Start by peeling and deveining your shrimp. If you find some prepped and ready for you even better! Keep in mind there will be about two to three shrimp per taco so plan accordingly based on how many people your feeding.


Step 2. Give your shrimp a nice drizzle of olive oil followed by a heavy sprinkling of our Lainey's Citrus Chili Seasoning Salt. About 1 to 2 tbsps per 20 shrimp. Mix well to combine and place in fridge to marinate for 15 to 30 mins.



Step 3. Hand made tortillas are always a crowd pleaser however if time isn't on your side or you don't have a tortilla press, your favorite corn tortilla will do just fine.


To make your dough, place 2 cups of masa harina in a large bowl followed by 2 tsp salt. Mix to combine. Carefully add 1 1/2 cups warm water to your masa mixture little bits at a time until it forms a soft dough. The dough should be soft and moist but not too wet. You may need to add more masa or more water to find the perfect consistency. Cover your dough with plastic wrap and place In the fridge to rest for 30 minutes.


When your ready to cook off your tortillas, get a pan on medium heat with a nice drizzle of your oil of choice. Roll about a tbsp ball of masa in your hands and press in your tortilla press. Cook until golden about 3 minutes on each side.



Step 4. To prep your slaw finely slice 1/2 a head of green cabbage, 1 fennel bulb and 1/2 a bunch of cilantro. In a separate bowl combine 2 tbsp mayonnaise, 2 tbsp plain yogurt, juice of one lime and 1 mandarin. Wisk well until it forms a smooth dressing, add salt and pepper to taste.


Add your dressing to your cabbage mixture and mix well till all your veg is dressed. Set aside.



Step 5.Your shrimp has been resting in all those delicious flavors so it's time to get them cooked off and ready to enjoy. Place a clean pan on medium heat with a small drizzle of olive oil. Add it your shrimp and cook about 2 minutes on each side until perfectly juicy. Remove pan from heat and add the juice of 1/2 lime and 1/2 mandarin. Lightly toss your shrimp to collect all those amazing flavors.



Step 6. It's time to build your taco! Place a tortilla down followed by a nice scoop of your slaw. Add two to three pieces of citrusy shrimp depending on size and garnish with fine sliced radish and or cilantro. To liven things up even more add a squeeze of fresh lime to finish it off with a bang.


Beware of hungry little ones stealing shrimp off your tacos! The kids love this one too!
